The smooth fry top is a chrome-plated professional cooking plate, manufactured in polished, high-thickness steel to ensure nonstick. Grooved fry tops can be requested in order to have the same effect as a grill. The surface of the fry top, heated by gas burners or electrical resistors, allows contact cooking as the food is placed directly on the plate without the use of oil. The fry top is used to cook foods such as meat, fish and vegetables at high temperatures. It can be used alongside (or in substitution for) pan frying in a drizzle of oil, but the fat-free cooking occurs between 180 and 230°C.
